Sri Lankan Roasted Curry Powder…

Traditionally, curry powder is a blend of various spices according to regional preferences and traditions. There are literally thousands of curry powders out there, this is a particular favourite of mine. It’s aromatic fragrance is out of this world.

1 tbsp uncooked long grain
or basmati rice
50g/2oz coriander seeds
25g/1oz cumin seeds
25g/1oz fennel seeds
7.5cm/3in piece cinnamon stik
1½ tsp fenugreek seeds
½ tsp cloves
½ tsp cardamom seeds (from
about 10 green cardamom pods)
½ tsp black mustard seeds
1 tsp black peppercorns
3 dried red Kashmiri chillies

Heat the pan and first put coriander seeds and fry it
till it starts to get golden brown.
Then add rest of the ingredients and fly all in medium
heat, till it is nice golden brown. (Do not burn it.)
Simply place all ingredients into a pestle and mortar
or in a grinder and grind to a fine powder.
You can store it for months in an airtight container.
