PASSION FRUIT JUICE

5 passion fruits 

300ml water

3 cubes of ice (crushed)

2 tbsp granulated sugar

juice of ½ a lime

Cut the passion fruits in half, scoop out the insides and add to the blender. 

Add the water, crushed ice, sugar and lime juice to the blender and blitz. 

Serve while still cold.

MANGO LASSI

250g mango

2 tbsp sugar 

3 cubes of ice (crushed) 

100g curd (or natural yoghurt)

Using a flexible knife, cut down the centre of the mango around the stone and repeat on the other side. Score each half with a criss cross pattern, turn inside out and scoop out the cubes.   

Add to a blender with the sugar and ice and blend to a pulp. Decant into a glass, setting aside 20ml, then pour in the curd or yoghurt. Finish off with the remaining pulp and serve immediately.

As with all juices and lassi’s, sugar is optional so if you don’t like it too sweet, just leave it out.
