Its all about the humble hopper. I've been sampling hoppers for the last 15 years on my trips to Sri Lanka. They're basically a bowl shaped pancake made out of rice flour and fermented coconut milk. You can use red or white rice flour, either way is great and then the choice of fillings is endless. From the plain hopper to egg hoppers with fiery symbol to anything else you can imagine. Generally I like to keep it traditional but I 've been playing around a bit recently and been on a bit of a western influenced tip, try them with 8hr slow roasted pork belly & salsa verde. Its off the hook!!
